Old Fashioned Strawberry Peach Crisp

A comforting dessert that combines juicy strawberries and peaches with a buttery, crumbly oat topping.

Ingredients:

6-8 medium peaches (blanched, peeled, and sliced)

2 cups strawberries (sliced) *

1 tablespoon lemon juice

2 tablespoons granulated sugar

3/ 4 cup packed brown sugar

3/ 4 cup all-purpose flour

N

1 teaspoon cinnamon

N

1/2 cup cold butter (cut into small cubes)

N

3/4 cup quick-cooking oats

*To make with only peaches, increase to 10-11 peaches and omit strawberries

Step 1:

Preheat oven to 375. Grease an 8 X 11-inch baking dish with butter or non-stick baking spray.

Step 2:

In a large mixing bowl, stir together the peaches, strawberries, lemon juice, and granulated sugar. Pour into the baking dish and set aside.

Step 3:

Add the brown sugar, flour, cinnamon, and butter to a food processor. Use the pulse setting to mix together the ingredients until the topping resembles pea-sized pieces.

Step 4:

Carefully transfer mixture to a separate mixing bowl. Stir in the oats until combined and crumbly.

Step 5:

Sprinkle the crumb topping over the peaches and berries.

Step 6:

Place the baking dish in the oven and bake for 30 minutes or until bubbly and the crumb topping is golden brown.
Cool slightly before serving.
