Macerated Peaches

With the brutal heat of summer bearing down, this recipe requires no oven or stove and makes the perfect topper for ice cream, pan­cakes, or yogurt. Or omit the vanilla and add a pinch of cayenne, then top grilled chicken or pork chops.

Ingredients:

3 large peaches, thinly sliced

½ tsp. vanilla bean paste or vanilla extract

½ tsp. Diamond Crystal or ¼ tsp. kosher salt

¼ cup (packed) light brown sugar

Assembly

Toss 3 large peaches, thinly sliced, ¼ cup {packed) light brown sugar,½ tsp. vanilla bean paste or vanilla extract, and ½tsp.Di­amond Crystal or ¼ tsp. Morton kosher salt in a medium bowl.
Let sit until juicy, 30-40 minutes.
