Macerated Peaches
With the brutal heat of summer bearing down, this recipe requires no oven or stove and makes the perfect topper for ice cream, pancakes, or yogurt. Or omit the vanilla and add a pinch of cayenne, then top grilled chicken or pork chops.
Ingredients:
3 large peaches, thinly sliced
½ tsp. vanilla bean paste or vanilla extract
½ tsp. Diamond Crystal or ¼ tsp. kosher salt
¼ cup (packed) light brown sugar
Assembly
Toss 3 large peaches, thinly sliced, ¼ cup {packed) light brown sugar,½ tsp. vanilla bean paste or vanilla extract, and ½tsp.Diamond Crystal or ¼ tsp. Morton kosher salt in a medium bowl.
Let sit until juicy, 30-40 minutes.
