Green Peach Salad With Simple Lime Dressing

A light, refreshing dish that blends the sweetness of peaches with crisp, savory ingredients and a tangy lime dressing.

Ingredients:

1/2 Cup Vegetable Oil

1/4 Cup Lime Juice

N

1/2 Tsp Kosher or Sea Salt

N

2 Cups thinly sliced firm peaches

N

2-3 finely chopped Serrano chiles

Mix it together

In a medium bowl, whisk the oil, lime juice, and salt until emulsified. Toss the peach slices and chiles with dressing. Cover and chill for at least 15 minutes before serving. Serve with cottage or goat cheese, adding a last sprinkle of salt.
