Gingered Apple Slaw

A crisp, refreshing salad that combines crunchy apples with ginger juice. Ginger juice adds a spicy kick to vinaigrettes and sauces, especially creamy dressings that temper its sharpness.

Ingredients:

4 apples (Gala or Honeycrisp)cored and cut into matchsticks

½ cup mayonnaise

Juice 1 lemon

1 tablespoon ginger juice*

N

2 tablespoons chopped fresh cilantro leaves

N

1 large jalapeno, stemmed, seeded, and minced

N

Kosher salt and black pepper

N

2 ounces crispy prosciutto or country ham** optional

Step 1:

In a medium bowl, use a rubber spatula to combine the sliced apples with the mayonnaise, lemon juice, ginger juice, cilantro, and jalapeiio; season with salt and pepper to taste. Toss with the prosciutto, if de­sired.

Notes:

*Ginger juice adds a spicy kick to vinaigrettes and sauces, especially creamy dressings that temper its sharpness. To make ginger juice, use a box grater or large-toothed Microplane to grate about 2 tablespoons of ginger. Then use your fingers to squeeze the juice from the grated pulp. Alternatively, you can use a garlic press to extract the pungent juice from a slice of fresh ginger.
**If you want to add crispy prosciutto to the salad, thinly slice the ham and fry it in a couple tablespoons olive oil until crisp, about 3 minutes. Transfer to a plate lined with paper towels to drain.
Break the ham into small pieces over the salad.
