“Firm” Peach Salad

A fresh, vibrant dish that highlights the natural sweetness and slight tartness of peaches while balancing it with other flavors and textures.

Ingredients:

N

12 firm peaches, pitted & thinly sliced

N

1/ 4 cup sugar

N

1/2 teaspoon kosher salt

N

2 TBSP Extra Virgin Olive Oil

N

2 TBSP Sliced Fresh Mint

N

1/2 teaspoon fresh cracked black pepper

Step 1: Toss together

sliced peaches with sugar and salt until evenly combined. Let stand at room temperature for 10 minutes.

Step 2: Stir in

Extra virgin olive oil, mint and black pepper.

Step 3: Cover and chill

For at least 30 minutes and up to 3 hours.

Serves 6-8
This salad is for the impatient cook who has firm peaches and wants to make some­thing right away. You may see this recipe in other places called a “green” peach salad, but our peaches are always tree ripened and never “green.”
