Asparagus with Parmesan Fonduta

A luxurious dish featuring tender asparagus spears served with a rich, creamy Parmesan cheese sauce.

Ingredients:

1 large bunch asparagus, woody ends trimmed

N

3 large egg yolks

N

3½ oz. Parmesan, finely grated

N

3 Tbsp. extra-virgin olive oil

Step 1:

Steam asparagus in a large steamer basket over a pot of boiling water until crisp-tender, about 3 minutes.

Step 2:

Meanwhile, whisk egg yolks and 1½ oz. Parmesan in a heatproof bowl set over a saucepan of simmering water until mixture is slightly thickened and very warm (about 3 minutes).

Step 3:

Slowly drizzle in the oil, whisking constantly until thickened and smooth (about 1 minute).

Step 4:

Remove from heat and whisk in 2 Tbsp. water and remaining Parmesan.

Step 5:

Season fonduta with salt to taste.

Step 6:

Transfer asparagus to a platter and drizzle with Parmesan fonduta.
